Cauliflower Fried Rice Recipe

When you crave greasy Chinese food it's hard to satisfy that craving! 

I made a satisfying recipe from a new cookbook and omg  it is sooo good. I added some ground turkey and made cauliflower rice bowls for dinner.

Not only did this recipe take me around 20 minutes to make, it's a clean dish and loaded with nutrients.

Cauliflower Fried Rice (2B Mindset Cookbook)
Makes 1 serving

Ingredients: 
2 cloves of garlic, chopped
1 green onion, chopped (divided use)
1 (12 oz) bag fresh or frozen cauliflower rice (approx 4 cups)
1/2 cup chopped (or shredded) carrots
1 egg, lightly beaten
1-2 tsp toasted sesame oil
1-2 tsp reduced sodium soy sauce or coconut aminos 

  1. Heat large nonstick skillet, lightly coated with spray, over medium heat
  2. Add garlic and half of the green onion; cook, stirring frequently, for 1 minute
  3. Add cauliflower and carrots; cook, stirring frequently, for 4-6 minutes, or until cauliflower is tender-crip. Reduce heat to medium-low
  4. Make a well in the center of the cauliflower mixture. Add egg; cook, stirring frequently to scramble egg into cauliflower mixture, for 2-3 minutes, or until egg starts to set
  5. Add oil and soy sauce; cook, stirring frequently, for 2-3 minutes, or until well mixed and heated through
  6. Garnish with remaining 2 tbsp green onion
  7. Optional: add 3/4 cup cooked protein such as tofu, ground turkey or chicken
